The department of Food Science wants to purchase an LC-MS system that can be used to analyze complex protein systems in food products and in relation to food production. The system will be used to characterization and quantification of protein modification such as oxidation and phosphorylation in the raw material and food products. It will also be used of characterization of complex non-specific protein hydrolysates generated from side streams during food production.
